Mouth closed

Ingredients (Serves 4)
5 cups flour
½ lemon juice
1 kg lean ground meat
1 large onion
1 tea glass of crushed walnut kernels
1 teaspoon black pepper
1 teaspoon salt
2 cups oil

Preparation
Fry the ground meat and finely chopped onion in a little oil. Add salt, black pepper, and finely chopped walnut kernels. Leave to cool in a large bowl. The dough is kneaded like a mouthful of dough. Walnut-sized balls are made and opened to the width of a tea plate. A dessert spoon of minced meat is placed in the middle and the mouth is tightened and closed with the help of the hand (the excess is cut off). It is first thrown into the oil heated in a frying pan with the wrinkled side facing down, then the other side is fried and removed, served, and eaten with bostana.

* The smallness of dishes such as mouth-watering and stuffed meatballs indicates the mastery of the maker.
