Ingredients
2 kg flour
250 gr clarified butter
200 gr sourdough
3 teaspoons of ash spice (boy, mahlep, fennel)**

Preparation
The flour is sifted into a deep bowl, the middle is opened, melted butter (sometimes melted whey), salt, spices and sourdough are added as yeast and left to ferment. Pieces of dough are taken on a board and the prepared dough is rolled out with a rolling pin to obtain round balls the size of a large bagel. The middle of the balls, the edges of which are serrated (shaped between two fingers), is shaped with wooden molds (=embroidery).
