Eggs with Onion

Ingredients (Serves 4)
4 eggs
2 large onions
3 red or green peppers
2 medium tomatoes
½ tablespoons tomato paste
½ çtea glass of plain oil
1 çteaspoon of black pepper
Salt
Preparation
Onions are cleaned and cut into fringe shapes, peppers are cut into small pieces. Onions and peppers are fried in the oil placed in the pan until they turn pink. Half a spoon of tomato paste is added and the frying process is continued, then peeled tomatoes are poured into the pan and mixed, when they have completely absorbed their water, salt and pepper are added. In the resulting mixture, holes are made here and there and the eggs are broken, the pan is closed and cooked on low heat for five or six minutes, then served hot.
