Bostan

Ingredients (Serves 6)
1 kg fresh tomatoes
8 fresh red / green peppers
1 bunch parsley
½ bunch mint
½ bunch purslane
½ bunch of green onions
Salt
As sour
Verjuice, pomegranate juice or pomegranate molasses
Preparation
Peel the tomatoes and chop them into small pieces. Remove the veins and seeds of the pepper, green onion, parsley, mint and purslane and chop them finely. Mix well with salt, add the sour and fill the bowls. The finer the ingredients are chopped, the better. The sour is verjuice in early summer, fresh pomegranate juice in autumn and pomegranate molasses in other seasons. Lemon salt and sugar mixture can be used in case of deprivation of others.
*Kök means Persian bû (smell), -stan (place) and is derived from bost’, which is used for vegetable garden.
