Sour Soup

Ingredients (Serves 5)
2 cups lentils
4-5 cloves garlic
Juice of 1 lemon
1 teaspoon dried mint
1 teaspoon red pepper flakes
1.5 teaspoons salt
8 cups water
2.5 tablespoons plain butter
Preparation
Put the lentils in a pot and wash them. Cook until it reaches the consistency of lentil soup with water and half a tablespoon of oil, then add salt and bring to a boil. The peeled and crushed garlic is added to the soup with lemon juice, two spoons of red pepper flakes etched in oil are poured on top and mixed, and dried mint is poured on top and served.
*The word sour is pronounced as ‘eşki’ in the Urfa dialect, by undergoing a change of sounds called metathesis. Just like in the examples (ağrı/argı) or (doğrama/dorgama), (çömlek/çömmek) like.
