Urfa Style Katmer

Ingredients (Serves 6)
1 kg baklava flour
1 kg unsalted Urfa cheese 
2 eggs
2 spoons yogurt
1 tea glass of plain butter 
3 cups of granulated sugar 
Lemon juice
Salt

Preparation
Knead the flour, two eggs, one tea glass of plain butter and a little salt, add one or two spoons of yogurt and let it rest for half an hour. For the syrup, mix three cups of sugar and two cups of water are boiled, a spoon of lemon juice is added and then it is cooled. Small pieces the size of walnuts are taken from the kneaded dough and rolled out very thinly with a rolling pin. Unsalted Urfa cheese is crumbled and placed in the middle, then folded from the sides to cover the cheese, the bottom and top parts are folded over and the sides are pressed with water. After frying in hot oil, it is taken to a serving plate after it has absorbed the syrup it was dipped in and eaten.
