Haytala

Ingredients (Serves 6)
2 kg milk
7 tablespoons of wheat starch
2 cups of sugar

Preparation
It is a type of pudding. After pouring two cups of milk into a bowl, starch is poured in, and the starch is whisked well so that it does not clump. On the other hand, the milk is poured into a pot and placed on the fire, and when it boils, the starchy milk is slowly mixed into it. After stirring on low heat so that it does not stick to the bottom and boiling well for about ten minutes, it is poured into a flat tray, and when it freezes and cools, it is slowly filled with water to cover it and placed in the refrigerator so that it does not dry out. Two glasses of water are poured over two glasses of sugar, stirred until it dissolves and then turned into syrup. When it is to be eaten, it is chopped into cube-sized sugar cubes and placed in bowls. It can be eaten by pouring plain or sugar-colored syrup/rose water over it, as well as by pouring sour cherry juice, orange juice/sherbet over it. It should be eaten cold, preferably iced.
