Rice with Uzleme

Ingredients (Serves 6)
½ kg seedless grapes 
1 cup chickpeas
300 gr lean cubed meat 
1 cup black molasses
1 cup plain butter 
5 cups riceç
Salt

Preparation
Chickpeas are boiled well, their skins are peeled and cut in half. The meat is placed in a pot and cooked by adding water. When the meat absorbs its water, oil is added and roasted. Washed and soaked grapes for an hour, previously prepared mukash chickpeas and salt are placed in a pot and boiled with a glass of molasses. This mixture is called uzleme. White pilaf** is cooked and placed on a serving plate. The top is covered with uzleme.

*uzleme is a mixture made from pitted dried grapes, molasses, mukash chickpeas and lean cubed meat and spread on pilaf. It is derived from the word "yüz", which is pronounced as "z" by dropping the letter (y) in the Urfa dialect.
