Tas Kebab

Ingredients (Serves 6)
1 kg lean lamb meat
½ kg shallots
1 tablespoon tomato paste
½ cup plain oil Salt and mixed spices
Preparation
Wash and cut the meat into cubes and place in a large, flat pot or pan. Clean the onions, cut off their heads, peel them and add them to the meat. Tomato paste, salt and spices are poured on it and placed in a large bowl and the pot is closed upside down, a weight is placed on top. Oil and a little water are added and it is cooked on a very low heat for two to three hours. When it is slowly removed from the bowl, the meat remains in the middle of the pot like an upside down bowl. It is served after it is placed on the table with the pot so that it does not lose its shape, and it is eaten with plain rice pilaf.
